The story of Ristorante Ai Bozzi begins in 2000, born from a dream and the great vision of its founder, Giovanni Mercuri. Rooted in the vibrant heart of Rome, in Trastevere, the restaurant began as a typical neighbourhood trattoria, guardian of the authentic flavours of tradition.
Over the years, the restaurant has undergone an important transformation. Thanks to the creativity and culinary innovation of our Chef Chiara, Ai Bozzi has become a refined and elegant reference point for those seeking Mediterranean and Roman cuisine reinterpreted with skill.
